Mexican Beef and Bean Wraps


These are so healthy and delicious!

1/3 lb. lean ground beef
1/3 cup oatmeal
1 1/2 tsp. chili powder
1/2 tsp. cumin
1 10 oz. frozen chopped spinach, defrosted and drained
2/3 cup chunky salsa
1 16 oz. can black beans, drained and rinsed
Salt and pepper to taste
1/3 cup shredded Cheddar cheese
2/3 cup cilantro, chopped
Whole grain tortillas

Combine beef and oatmeal. Brown in skillet over medium heat for 8-10 minutes. Remove and drain. Add beans, spinach, spices, and salsa to the pan. Heat through. Remove from heat and stir in cheese and cilantro. Place in warmed tortillas and enjoy!!

Hey Aimee, the bean wraps look delicious - we love Mexican! I read something yesterday and thought about you because you like guacamole... save the avacado pit and when you store the leftover guac put the pit in it and cover tightly to prevent browning.

We tried these tonight. We haven't used hamburger in months so I fixed it with ground turkey. Real good!
