Lasagna Presto

This is a great recipe that I received from a friend. It's easy to double for when you have company and I serve it with garlic bread and a Caesar Salad.

8 oz egg noodles
1 lb. ricotta cheese
1/2 lb. mozzarella cheese
1/4 cup parmesan cheese
1 egg (use only 1 egg when doubling)
15 1/2 oz. jar spaghetti sauce (extra is good)
1/2. lb. ground beef
Salt and Pepper to taste

Brown beef and add the sauce. Cook noodles according to package directions and drain. Combine noodles, ricotta, mozzarella (reserve 1/2 cup for topping), parmesan, egg, salt and pepper.
Spread a little sauce on bottom of greased 2 qt. casserole. Put half of noodle mixture over sauce, repeat with remaining sauce and noodles, ending with sauce. Top with mozzarella.
Bake at 350 for 20-30 minutes. (Bake for 40 min. if doubled)

You can double this in a 9x13 pan. Also you can add sausage or mushrooms.

Mary Wallace would die to know her recipe is going global! I really do love this stuff. It's addicting/addictive. Whatever.
